Based at the Mandarin Oriental Palace, Luzern, within the Culinary department, the Chef de Partie is responsible for assisting the Head Chef and Sous chef to supervise and run all sections at the kitchen they have been assigned to. The Chef de Partie reports to the Head Chef

• As Chef de Partie, you will be responsible for the following duties:
• Managing a given station in the kitchen and ensuring a smooth workflow in compliance with quality and hygiene standards
• Ensuring impeccable preparation, quality and attractive presentation of our cuisine in line with our high quality standards
• Ensuring that food losses are kept to a minimum
• Creative support in the development of new food concepts
• Food orders in coordination with the supervisor as well as controlling the daily merchandise receiving
• Responsible for the daily control of hygiene regulations and cleanliness according to HACCP guidelines

As Chef de Partie, we expect from you:

• A completed apprenticeship as a cook. 2-3 years of work experience in a similar function - preferably in the upscale hotel/catering industry
• Flexibility and ability to work under pressure - your position will include weekend and holiday shifts
• Eye for detail and creativity - to bring your culinary signature to the table
• Excellent communication, teamwork and organisational skills
• Strong leadership skills - to manage your own station
• High level of commitment as well as a structured, result-oriented and independent work style
• High quality awareness
• Very good knowledge of German and English
• Further foreign language skills are an advantage

Als Chef de Partie sind Sie für die folgenden Aufgaben verantwortlich:

• Leitung eines jeweiligen Postens in der Küche sowie die Sicherstellung eines reibungslosen Arbeitsablaufs unter Einhaltung der Qualitäts- und Hygienestandards
• Gewährleistung einer einwandfreien Zubereitung, Qualität und ansprechenden Präsentation unserer Speisen entsprechend unserer hohen Qualitätsansprüche
• Beachtung, dass Lebensmittelverluste auf ein Minimum beschränkt bleiben
• Kreative Unterstützung bei der Entwicklung neuer Foodkonzepte
• Warenanforderung in Abstimmung mit dem Vorgesetzen sowie die Kontrolle des täglichen Wareneingangs
• Verantwortlich für die tägliche Kontrolle der Hygienevorschriften und der Sauberkeit im Rahmen der HACCP-Richtlinien

Als Chef de Partie erwarten wir von Ihnen:

• Eine abgeschlossene Ausbildung als Koch/Köchin. 2-3 Berufserfahrungen in einer ähnlichen Funktion – bevorzugt in der gehobenen Hotellerie/Gastronomie
• Flexibilität und Belastbarkeit – zu Ihrer Position gehören Wochenend- und Feiertagsschichten
• Auge fürs Detail und Kreativität – um Ihre kulinarische Handschrift mit einzubringen
• Ausgezeichnete Kommunikationsfähigkeit, Teamfähigkeit und Organisatorische Fähigkeiten
• Hohes Engagement sowie eine strukturierte, ergebnisorientierte und selbstständige Arbeitsweise
• Hohes Qualitätsbewusstsein
• Sehr gute Deutsch- und Englischkenntnisse, weitere Fremdsprachenkenntnisse sind von Vorteil
